There are only a few days left until Jaiba MX and Maymanta come together at NH Collection Constanza for a four-handed dinner that will bring together the flavors of Mexico and Peru in six courses. On November 27, Roberto Ruiz (Jaiba MX) and Omar Malpartida (Maymanta Barcelona) will share the kitchen, while DJ Nacho Donatelli plays Latin and Afro-house rhythms in the dining room to complete a night that smells of market, grill and Pacific coast. Jaiba MX × Maymanta: two chefs, six passes and DJ in Les Corts

The menu of the next November 27 is understood as a small trip through the Latin American streets taken to a table in Les Corts: the welcome starts with two bites that play between a tuna temaki with a Nikkei wink (Peruvian-Japanese fusion) and a corn tostada with carabinero and macha sauce (a Mexican sauce of dried chilies, nuts and oil).
The introduction is followed by a double ceviche that sums up the Mexico-Peru dialogue – one pachamanquero (inspired by pachamanca, the Andean technique of cooking in stone and earth heat) and another of lemon fish cured in dried chilies – before entering the most substantial part, the main courses, with a grilled quail and a rib eye taco seasoned with padron peppers (a local nod) and grilled onions, reinterpreting a Mexican classic.
The closing returns to the emotional terrain: Oaxacan chocolate and sweet potato and pumpkin churros, like an echo of the fairs and plazas on the other side of the Atlantic.
Decor inspired by Mexico and Peru

The decoration will be inspired by the colorful streets, designed to celebrate and represent the cultural richness of both countries and the music will be provided by DJ Nacho Donatelli, with a selection of Latin and Afro-house rhythms that accompanies each pass of the menu without turning the evening into a show, wrapping it with delicacy.
The chefs behind the “Cuatro Manos” dinner

Roberto Ruiz is the chef behind Jaiba MX, a project from which he has transferred his contemporary Mexican look to the NH Collection Barcelona Constanza after a career that includes a MICHELIN Star during his time in Madrid. Omar Malpartida, meanwhile, is the chef who leads Maymanta -in Ibiza and also in Barcelona- after training in Lima and developing in Spain a modern Peruvian cuisine that combines local produce with flavors from his country.
