Andreu Sayó, from pastry shop, has won (again) the title of “Best Artisan Butter Croissant of the State 2024, in the XVII Contest organized by the Gremio de Pastelería de Barcelona.
The competition for the Best Artisan Butter Croissant of the State 2024, sponsored by Cart Service, Harinas Ylla, Mantega Elle & Vire and Bongard, has celebrated its 17th edition with the aim of encouraging and rewarding artisan skills in the preparation of the croissant, an emblematic product in the pastry. Among the winners of previous editions are recognized pastry shops such as Prat ‘Can Carriel’ (Roda de Ter) in 2023 and Canal (Barcelona) in 2022.
A historic patisserie with an above-average croissant
Brunells patisserie is a regular suspect in the competition. It won the award right after opening [trackLink link_url="https://barcelonasecreta.com/mejor-croissant-de-espana/"]in 2020 and also in 2021 and now, three years later, it is back to confirm that its butter croissant is above average.
Thus, this Borne pastry shop has reached a unique milestone : making the best croissant in the country for the third year.
This Borne pastry shop, which opened its doors in 1852 and closed in 2018, and reopened in 2020 completely refurbished in the Born neighborhood. This historic venue pays homage to Barcelona’s traditional pastries, offering both iconic desserts and more international creations.
Sayó describes his croissant as “a product with many twists that we seek to be crispy and light, and that when baked retains as much of the butter as possible.” In 2020, after winning the competition for the first time, sales of croissants increased tenfold.
