We told you about Lanzhou noodles at the beginning of this article, when they just landed with Maji Beef Noodles. Now they have spread around the city, and we have become accustomed to Lanzhou and to know that in that Chinese city these hand-pulled noodles served in a beef broth ramen that cooks for hours are typical.
Now, the offer scales with Jin (C/ Aribau, 29), a restaurant opened just a couple of months ago that has achieved a milestone: to be the only Chinese restaurant in Barcelona to receive official recognition from the Chinese government for the quality of its noodles.
Jin, Lanzhou’s embassy in Barcelona
This is what they have announced on their Instagram profile, where they have shared a video of the visit of the vice-governor of the province of Gansu (where these famous noodles originate from) and the dean of the Lanzhou Noodle School. The visit was not accidental: both took part in a ceremony to declare the Jin restaurant as a recognized center for the traditional preparation of these millenary noodles.
What makes Jin special is not just its tasty soup or its premium ingredients. What really makes the difference is the process for making the noodles: by hand, one by one, without machines and following an ancestral technique that has been passed down for generations. Just flour, water, and the skill of the cook to transform the dough into very thin noodles at the rhythm of his hands.
Lanzhou Noodle Workshops
If after tasting them you are curious , you have the option to learn how to make them yourself. Jin organizes a workshop every Saturday, from 4:30 to 6:30 pm, where they teach the traditional technique of Lanzhou noodles. The course is for small groups of maximum eight people, includes all the ingredients and utensils… and, of course, ends with a bowl of noodles that you will have prepared yourself.
They also organize private workshops for larger groups, and to sign up you just have to fill out an online form or write them directly via Instagram.
