The contest that chooses the best xuixo in the world has crowned the pastry Trias of Santa Coloma de Farners as the winner in the last edition held this Saturday in Girona.
The recipe of Quim Trias, pastry chef of the fourth generation of the Trias family, was the winner among some thirty pastry shops and bakeries from different regions of Catalonia. In his establishment, each xuixo has the same price as always: 2.20 euros.
The bakery, well known in the town, was founded in 1908 by her great-grandfather, Joaquim Trias, in Carrer del Centre. “Our xuixo is made with lard, like our croissants,” explained Trias.
The elaboration of this traditional sweet requires several phases of fermentation and a meticulous process that culminates with frying in extra virgin olive oil and sprinkling with sugar.
To make it even more Catalan, Trias has expressed his desire to use extra virgin olive oil of Catalan origin in the future, as they currently use an imported product.
To participate in the contest, the xuixo presented by the Trias bakery had to lose weight: from the original 100 grams to the 65 and 85 grams established by the contest rules.
This contest, created by the journalist Salvador Garcia-Arbós, has served to vindicate and popularize the xuixo, a sweet originally from Girona invented in 1918 by the pastry chef Emili Puig.
The competition, which has been held since 2018, has awarded prizes to several pastry shops, including Padrés de Banyoles (2018), Pa Artesà del Vallès (2020), Juhé de l’Escala (2022) and Triomf de Barcelona (2024).
