The bikini is the best example of how with very little you can do a lot. Or at least leave well satisfied many mouths of diverse appetites, of disparate demands. This sandwich of confusing etymology got a big brother, an improved version that in Madrid they call mixto con huevo, but it has not been and will not be the only evolution of the bikini.
And we, sandwich fanatics as we are, have compiled in this list some of our favorite sandwiches in Barcelona. They can complement our classic bikini, but never replace it.

It goes without saying that it is Caro, but of high quality. And, in addition to its country bread, abundant melted cheese and thinly sliced ham, it is served with half a grilled tomato on one side of the sandwich.

The concept of this place is based on raw food, i.e. raw or undercooked cuisine, with tartar being one of the omnipresent dishes. And of course, you can’t miss their bikini of beef tartar with low temperature egg yolk and truffle.

Just the name of this place is already hooking. Here it’s all about innovation, even more so than in the rest of the places on the list. That’s why they have, among many other surprises, carbonara bikini, with guancially, parmesan, caramelized onion and egg yolk.
Bikini from my childhood from Bar Alegria
The childhood bikini of the Abellán family, owner of Alegria, is probably not the bikini of our childhood. Theirs has good truffle and a ham and a first class cheese that make it a bite of ten. We tried it at Casa Luz, a branch of the bar on top of a hotel, and have not hesitated to include it in this list.
