Barcelona is the city of stew and Catalonia is the capital of xup-xup. And if a couple of days ago we knew that the best esmorzars de forquilla restaurant was in Barcelona, now we have to add another title: the best tripe in the world is eaten in L’Hospitalet.
The restaurant L’Artesana Santa Eulàlia ( Carrer de l’Aprestadora, 9), in L’Hospitalet, run by Romina Reyes, Pau Pons and Héctor Barbero, has just won the VIII World Championship of Callos Pedro Martino, held within the congress San Sebastian Gastronomika 2025. His dish, a fusion of Riojan tradition and Catalan touch, won over the jury – headed by Benjamín Lana – for being “an original recipe, well executed, fine and with grit, in a competition where orthodoxy predominated”.
The winning recipe: between La Rioja and Catalonia
Far from the more traditional formulas, the trio of chefs has reinvented Rioja-style tripe, incorporating a local touch: Catalan capipota (cow’s snout, cheek and feet) and chickpeas, the only stew in the competition that included them this year. The result: a mellow, fluid dish with a spicy touch, which stood out among the ten finalists.
And best of all, a portion of their tripe costs only €10.50, so it is affordable for everyone.
The award comes just as the project begins to consolidate. The project started in Poblenou, offering homemade food at popular prices (in fact, their menu is one of our favorites in Barcelona), and now it has spread to L’Hospitalet, confirming that they are one of the gastronomic jewels of Barcelona.
The Callos World Championship, organized by chef Pedro Martino, selects every year the ten cooks who best prepare this dish throughout the country. In this edition, names such as Cristina Rei (La Gitana, Gijón), David Morera (Deliri, Barcelona) or Lucía Fernández (La Tabernilla de Oviedo) participated. Almost all of them opted for classic versions, without legumes and with cautious sauces… except L’Artesana, which dared to use chickpeas and won.
