Público, like many of the restaurants on Enrique Granados Street, is an ambitious project. Spacious premises, significant investment and high expectations. However, unlike other establishments that seem more focused on impressing than offering quality, Público has found the perfect balance between an imposing space and a high-level gastronomic offering .
This restaurant, which also serves as a bar, wine store and fish grill, has become an excellent choice for a memorable dining experience in the area. Upon entering, Público is presented with a fresh fish bar where diners can choose their favorite piece for a feast. In the center of the restaurant, a wine store displays all the bottles on the wine list, available at cost price (with a supplement of 8€ if you wish to consume at the table).
And at the back, the icing on the cake, a dining room surrounding an open kitchen, almost like a sushi bar, from which traditional dishes are reformulated with grace and precision. An outstanding example is its Russian salad with pickled mussels. Few dishes have been reinterpreted so many times, and few versions have been as successful as this one, which maintains its classic essence but is enriched with the sweetness of the shrimp and the acidic umami of the mussel marinade.
Another notable dish is stuffed squid, a jewel of Catalan cuisine that is scarce due to its laborious preparation. Here, they are stuffed with black sausage, ceps and hazelnuts, accompanied by a suquet and fesolets de Santa Pau. This dish is an authentic
example of culinary mastery . Other classics include tartar on brioche and parmentier with low-temperature egg and foie gras, all unctuous. To drink, if you can opt for a wine pairing, it is highly recommended.
